The pioneers valued
sassafras tea as a spring tonic. The roots of the tree were dug
before spring?s warmth brought the sap up from the roots (we find
mid-February to be ideal). The tea made from the roots was thought
to help throw off the sluggishness in the body from the winter of
inactivity.
To brew: Use stainless steel or glass pan only
(other pans will be stained).
Combine 2 quarts of water and ? bundle of washed
sassafras.
Bring to boil, then simmer for about ? hour.
Add more water if desired.
Serve plain or with brown sugar or sweetener of
your choice.
The brewed tea can be kept as you would any other
sweetened drink. The roots may be dried and reused. Keep roots in a
dry place for storage. Should they become moldy, discard them
immediately.
One bundle makes one
gallon, but as mentioned, can be reused multiple times.
